Abstract

Despite the complicated conditions in the food supply chain, we identify the risks in it based on the food related standards in China. We analyze the standards and summarize the types of the risks, then map them into the five main phases in the food supply chain, which are production, processing, transportation, storage and sale. The classification will help us to find the key risks in each procedure and take measures to mitigate them. We also investigate how to use the Internet of Things to mitigate the risks. Some of them can have been solved and some of them are solvable. However, we argue there are still some risks cannot be covered by the IoT technologies. We believe this research can help other researcher find how well the IoT technologies can resolve the food safety problem.
